Sate Crab-Curry Dip

A party won’t be complete without some chips sided with a tasty dip! Pair your prawn chips or fish crackers with this Sate Crab-Curry dip that’s made with crab meat, ground pork, cilantro, lemongrass, onions, garlic, ginger, and red curry paste. It’s made even creamier with coconut milk and peanut butter. Finally as this dip is bursting with flavors, your kropek┬áhas finally found its match.

Ingredients :

150 g Crab meat
300 g Ground pork
1 bunch Cilantro
1 bunch Lemongrass, soft parts only, no roots
1 cup Onions, chopped
0.33 cup Garlic, minced
1 thumb-sized Ginger, sliced red curry paste
3 tbsp Coconut milk
2 tbsp Local peanut butter
2 tbsp Sesame seeds, roasted
1 Chicken cube
1 tbsp Brown sugar
0.5 tsp Black pepper
Prawn or shrimp crackers

Procedure :

    In a food processor, mince together crab meat, ground pork, cilantro, lemongrass, onions, garlic, ginger, and red curry paste. Set aside.

    In a sauce pot, bring coconut milk to a boil. Lower heat and simmer over medium high. Stir in the pork-curry mixture and simmer for 10 minutes.

    While pork mixture is simmering, pound sesame seeds in a mortar and pestle until it forms a paste.

    Add the pounded sesame seeds, peanut butter, chicken cube, brown sugar, and patis to the simmering pork mixture. Adjust the taste by seasoning with patis and pepper. Serve as an appetizer with kropek.
