Pork Binagoongan with Eggplant

Delight in the rich flavors of this favorite Filipino recipe. Pork binagoongan is a dish with pork liempo pieces that’s simmered with tomatoes, fresh salted alamang, eggplants and finger sili. Prepare this hearty and boldly flavored meal that’s a perfect baon to school.

Ingredients :

3 tbsp Cooking oil
3 Garlic, minced
1 cup Onions, chopped
1.5 cup Tomatoes, chopped
1 kg Pork liempo, sliced into 1/2 inch cubes
0.25 kg Fresh salted alamang (for bagoong)
0.5 cup Water
2 Whole eggplants, sliced
Rock salt and/or patis to taste
A pinch of sugar
2 pc Finger sili

Procedure :

    Pour alamang into a bowl and add some water. Remove particles that float on top. Pour into a sieve and discard liquid. Set aside.

    In a large wok, heat cooking oil. Sauté garlic and onions together. Add tomatoes and continue cooking until tomatoes get mushy, about 7-8 minutes

    dd pork pieces and cook with the tomato- onion mixture. When pork has firmed up, allow to simmer for another 5 minutes.

    Add the bagoong to the pork. Pour in 1/2 cup water. Bring to a boil, cover and simmer for 45 minutes.

    When pork is tender, add eggplant slices and finger sili. Taste and adjust seasoning with rock salt and/or patis and a pinch of sugar. Serve with rice and sliced green mangoes.
