Low-Fat Buko Pandan Pudding

Buko Pandan is a type of Filipino cold dessert made of coconut, sweetened cream and srewpine leaves known as “Pandan”. It is very popular in every Filipino party and salu-salo. In this recipe, enjoy a cup of buko pandan flavored pudding chilled overnight without that unwanted calories.

Ingredients :

6 servings
1 L Low-fat milk
2 tbsp Buko pandan extract
1 pinch Cinnamon
0.33 Coconut sugar
1 cup Clear unflavored gulaman powder
1.5 cup Fresh buko strips

Procedure :

    Heat the milk in a casserole. Add the buko pandan extract, cinnamon and coconut sugar and mix until well dissolved.

    Add the gulaman powder and stir continuously with a whisk until dissolved and the mixture is thick and creamy.

    Transfer the pudding into serving glasses uncovered at room temperature. When cool, cover with plastic wrap, and refrigerate for at least 4 hours (preferably overnight) before serving. Top with buko strips.
