If you love desserts or refreshers with chewy sago, you should serve this fruity sago with coconut milk for merienda. Its flavor comes from the pandan leaves that goes well with the creamy taste of coconut milk. Add in the fresh fruits and chill it in the refrigerator. Enjoy!
|2 cup||Cooked sago|
|0.5 cup||White sugar|
|1 cup||Canned or fresh coconut milk|
|1 cup||Assorted diced fresh fruits in season|
|Fresh mint (optional)|
1Wash cooked sago. Boil water and pandan leaves. then add cooked sago. Boil for 5 minutes. Drain. Discard pandan leaves.
2Combine sugar, water and pandan in a saucepan. Allow to boil. Pour in coconut milk and allow to boil briefly. remove pandan leaves and pour in blanched sago. Add fresh fruits and chill until serving time. Garnish with fresh sprigs of mint.
