Fruity Sago with Coconut Milk

If you love desserts or refreshers with chewy sago, you should serve this fruity sago with coconut milk for merienda. Its flavor comes from the pandan leaves that goes well with the creamy taste of coconut milk. Add in the fresh fruits and chill it in the refrigerator. Enjoy!

Ingredients :

5 servings
2 cup Cooked sago
6 cup Water
6 Pandan Leaves
For Sauce
0.5 cup White sugar
1 cup Water
2 stalk Pandan
1 cup Canned or fresh coconut milk
1 cup Assorted diced fresh fruits in season
For Garnishing
Fresh mint (optional)

Procedure :

    Wash cooked sago. Boil water and pandan leaves. then add cooked sago. Boil for 5 minutes. Drain. Discard pandan leaves.

    Combine sugar, water and pandan in a saucepan. Allow to boil. Pour in coconut milk and allow to boil briefly. remove pandan leaves and pour in blanched sago. Add fresh fruits and chill until serving time. Garnish with fresh sprigs of mint.
