Easy Baked Ampalaya Chips

Ampalaya can taste bitter but with this recipe, every chip is cooked to a crisp alongside with lemon sour dip!

Ingredients :

4 servings
1 Large ampalaya
0.25 cup Olive oil
0.5 tsp Salt
0.5 tsp Turmeric powder
0.5 tsp Chili powder
0.5 tsp Ground coriander seeds
0.5 Juice of lemon
2 tbsp Grated parmesan cheese
For Lemon Sour Dip
Sour cream
0.5 cup Lemon zest
1 tsp Lemon juice
2 clove Garlic, minced
Salt and pepper, to taste

Procedures :

    Slice ampalaya into 1⁄4” rounds and soak in salted water for 15 minutes. Discard brine and wash ampalaya, then pat dry with paper towel.

    Mix in the olive oil, salt, spices, and lemon juice. Marinate for another 15 minutes.

    Preheat oven to 425 ̊F. In a baking sheet, spread out the marinated ampalaya slices and bake for 10-15 minutes or until crispy, flipping every 5 minutes to cook evenly.

    Cool on baking sheet for 10 minutes before serving. Sprinkle parmesan cheese on top and serve with lemon sour cream dip.

for Lemon Sour Dip

    In a small bowl, whisk together sour cream, lemon zest and juice, and garlic. Season with salt and pepper. Serve with the ampalaya chips.
