Binagoongang Baboy at Manok sa Tsokolate

Bagoong is not just a condiment but an ingredient as well. This versatile ingredient boasts a sweet and salty umami flavour which has been a Filipino staple for a long time. When combined with chicken, pork and chocolate, a flavourful sensation will arise to your pallets. Don’t forget to share as this flavourful dish would make you want to eat the whole serving!

Ingredients :

5 servings
0.75 kg Pork liempo, cut into serving pieces
0.75 cup Water
0.5 kg Chicken thighs
1 tbsp Minced garlic
1 pc White onion, chopped
2 pc Long green chilies
1 cup Shrimp paste (bagoong)
0.3 cup Vinegar
150 g Dark chocolate, chopped
1 pc Shaved white chocolate, for a sweet garnish
1 pc Chopped spring onions for a savory garnish
1 pc Chopped bell peppers for a savory garnish

Procedure :

    Place the pork liempo and 1⁄4 cup water in a pan. Cover and cook at low-medium heat until the water has evaporated and pork is tender.

    Add chicken thighs and continue to cook until the fat has been rendered. Set aside chicken and pork pieces.

    Sauté garlic and onions in the same pan using the rendered fat, until the onions are translucent. Stir in the green chilies and the cooked pork and chicken.

    After several minutes, pour in the bagoong. Sauté and continue to cook. Add the remaining water and vinegar. Simmer for several minutes.

    Stir in the chopped dark chocolate until melted. Simmer until it reaches the desired consistency. Taste and adjust seasoning.

    Transfer to a serving dish and garnish with some white chocolate for a sweet contrast or spring onions and bell peppers for a savory finish. Serve hot.
